There are a few "must have in the fridge at all times" items here in the Hunter home- One of those is our favorite Spicy Sun-dried Tomato Hummus.
I've kind of always liked hummus, but then I got a food processor as a wedding gift and a whole new world of hummus possibilities opened up to me!
We like food with a kick!
This hummus, has just the perfect amount.
It's SOOOOO easy to make.
Did I say it's DELICIOUS?
You can use it in so many ways.
and..... this recipe makes enough to last a week, if not more.
Spicy Sun-dried Tomato Hummus:
Ingredients:
+ 2 cans garbanzo beans or chickpeas (rinsed and drained)
+ 1 jar (7ounces)sun-dried tomatoes *hint* buy the big jar at Costco
+ 2/3 Cup Water
+ 3 Tablespoons Olive Oil
+ 2 garlic cloves halved
+ 1/2 tsp Salt
+ 1/2 tsp pepper
+ 1 Tablespoon Crushed Red Pepper Flakes (THE KICK)
*if you don't too much spiciness, only use 1/2 Tablespoon
Directions:
1. Put everything in Food Processor
2. Process on High till smooth.

I like to eat my hummus with tortilla chips or carrots. My husband's favorite Lunch is Hummus Lettuce Wrapsaka- sandwich minus bun plus hummus. He loves it and it's super healthy. You can't go wrong. |
Super yummy lettuce wraps, and you could add or subtract whatever you like! The Husband likes turkey, pepper jack cheese, tomato, pickle and of course, hummus! |
