We've had lots of snow here in Provo the last few days. Unlike many, Scott and I love it. We'd be happy with two more feet!
Snow is inherently connected to warm food. Hot Chocolate, breads, soups or in our case... chili.
I am impressing myself with my newly found cooking skills. Marriage does things to you I guess. I looked at a few different chili recipes to get the idea and then I came up with this recipe here all on my own!! It was surprisingly yummy and healthy. So I thought I'd share
When it's Chilly Chili : by Elise Hunter
Ingredients:
- 1 yellow onion, diced
- 3 cloves garlic minced
- 1.25 lbs ground turkey
- 1 can diced tomatoes
- 1 little can diced green chilies (New Mexican Influence)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground black pepper
- 1 teaspoon ground cinnamon
- 1/2 tablespoon dark brown sugar
- 1 can black beans (drained)
- 1 can whole kernel corn (drained)
- 1 can kidney beans
- 1 can low sodium chicken broth
- 1 tsp tapatio (any hot sauce would work)
Directions
- brown the ground turkey with the onions and the garlic in the bottom of your pot
- add in tomatoes,green chilies, spices and sugar. simmer for 5 minutes
- add in black beans, broth and corn.
- in a food processor or blender puree the kidney beans (looks like gross pink paste but it thickens up the chili)
- add in pureed kidney beans and taptio
- simmer for 10 min (or as long as you like)
We served our chili over baked potatoes. Inspired by our favorite fast food meal- Wendy's baked potato and chili. But this was better...and cheaper.

P.S. Miracles still happen. We've been dreading getting Scott's ER bill in the mail. It came, I opened it, and instead of a bill we got a refund check. It was awesome!
